This simple switch to broiling potatoes is truly a game changer in flavor and crunch factor!!
What you need:
- 1 potato (I used russet, but any kind will work)
- 1 Tbsp. of olive oil drizzled
- 1/2 tsp. garlic salt
- 1/2 tsp. pepper
- 1/2 avocado
- 2 Tbsp. hummus
Begin by rinsing and microwaving the potato for 2 mins. (make sure to use a knife to poke hole in the potato before microwaving)
As the potato is microwaving set the oven to broil. Once the potato is out of the microwave, cut it in half and slice downwards and side to side on the front of the potato (see the photo).

Then season both sides with olive oil, garlic salt, and pepper. Place directly on to a piece of foil and place in the oven for 5 mins. Once the potato has browned, flip it over so the skin side can also crisp up! (about 3mins on the other side)
Once nice and crispy, remove the potato from the oven and top with hummus, avocado, and sauerkraut. Enjoy!
