Mixed Kale Salad

This one is a great option for me and quite versatile depending upon what is in the fridge. If you like to mix and match flavors, this one is for you!

What you need:

  • 1 bunch of kale diced
  • 1/4 cups of sauerkraut
  • 1/4 cup diced apple
  • 1/2 an avocado diced
  • 1/4 cup green olive
  • 1/2 cup quinoa
  • 1/4 cup diced roasted sweet potatoes
  • 1 Tbsp of sunflower seeds
  • 1/4 cup ground turkey
  • 1 Tbsp balsamic vinegar

Begin by first chopping the kale into bite size pieces, then add in the sauerkraut and massage until softened. Next, we chop all the toppings that need to be chopped: apple, avocado, and green olives.

Now it is time to mix all the toppings with the kale: apple, avocado, green olive, quinoa, sweet potatoes, turkey, and sunflower seeds. I like to add them on top like pictured below and then drizzle with balsamic vinegar. Mix up the salad and enjoy!
