Banana Chocolate Chia Seed Pudding

This breakfast has been one of my favorites, it is quick, easy and delicious!

This recipe has so many different ways to prepare it, I have made it chocolate banana (which I will show you today), plain, chocolate protein, and savory (with a soft-boiled egg!), the list can really go on and on!

I am sticking to the banana option at the moment, while avoiding high inflammatory foods. This option helps me to start my day with a high fiber and satiating meal.

What you need:

  • 2 Tbsp chia seeds
  • 1 Tbsp ground flax seed mill
  • 1 Tbsp psyllium husks
  • 1 tsp coco powder
  • 1/2 a banana
  • 1/4 cup almond milk
  • 1/4 cup water
  • 1/2 cup frozen mixed berries
  •  1/4 cup homemade granola (for topping)

Begin by mashing half of a banana in a microwave safe bowl. Then pour in the chia seed, flax seed mill, psyllium husks, and coco powder. Now mix in the almond milk and water.

At this point you should have a gelatinous mixture that is similar to pudding. Next pour in the frozen berries and microwave until they have softened. (usually about 30 second to a 1 minute)

 Now that your pudding is warm you can top with some granola and enjoy!
