Balsamic Roasted Brussels Sprouts

This is a fun way to spruce up your Thanksgiving brussels sprouts!

What you will need:

  • 1 lb brussels sprouts
  • 1 small red onion
  • 3 garlic cloves
  • 2 Tbsp olive oil
  • 1/4 cup balsamic vinegar
  • salt and pepper to taste
  • 1/4 cup pomagranate seeds
  • 1/4 cup toasted sliced almonds

Begin by chopping the brussels sprouts, onions, and mincing the garlic.

After you have chopped the vegetables. Begin heating the saute pan with olive oil in it. Once the pan is heated, place each brussels sprout face down in the pan. Let it sear until it is brown.

As the brussels sprout cook, begin reducing the balsamic vinegar on medium heat on the stove until it bubbles and thickens.

Once the brussels have browned on one side, flip them and add in the onion and garlic to cook down.

Once the onion has cooked and the brussels sprouts browned, remove them from the heat. Once they have slightly cooled, drizzle with the balsamic and top with the pomegranate and almonds. Enjoy!
