This blend is a super simple roasted side or even a base for several salads.
Here is what you need:
- 3 potatoes
- 1/4 cup chopped yellow onion
- 1 can of chickpeas
- 1 Tbsp. olive oil
- 1/2 tsp. of garlic salt
- pepper to taste
- 1/2 tsp. Za’atar seasoning
Begin by preheating the oven to 450°F. Dice the potatoes and onions into bite-sized pieces and place on a cookie sheet. Drain the chickpeas and add to the cookie sheet.
Drizzle olive oil onto the potatoes, onions, and chickpeas and season with other spices. Mix all the ingredients before placing in the oven for 30 minutes or until golden brown. Toss every 15 mins and serve once they have cooled.
