Greek Summer Salad

Buckle up because this Greek salad will knock your socks off if you’re not careful.

This salad is inspired by some typical Greek flavors, or at least what we think of as those flavors. This salad is best eaten over our tried and true Roasted Potato and Chickpea Blend.

Here is what you need:

  • 4 tomatoes
  • 1/2 cup sliced kalamata olives
  • 1/4 cup diced pepperoncini
  • 1/2 cup sliced marinated artichokes
  • 1 diced cucumber
  • 1/4 small red onion
  • 1/4 cup chopped salami
  • 1/2 cup feta cheese
  • 1/4 cup minced parsley
  • drizzle of olive oil
  • salt and pepper to taste

Begin by chopping the first 6 ingredients into bite-sized pieces. Finely chop the pepperoncini and parsley. Once everything is chopped, place in a bowl and crumble the feta on top. As you mix all the ingredients together, drizzle with olive oil to create a light dressing. Your salad is now ready to be served!
