Healthy Chocolate Chip Cookie

These cookies are natural sweetened, gluten free, and dairy free!

Whenever I bake, I always try to find natural ways to sweetened or to use less sugar. I think it is safe to say, I have met my match! These cookies are simply delicious and will be repeated often in my kitchen 🙂

What you need:

  • 3/4 cup dates
  • 1/2 cup nut butter (I used almond)
  • 1 tsp. vanilla extract
  • 1/4 cup chocolate chips (I chopped up Lily’s Salted Caramel bar)
  • 1 cup almond flour
  • 1/8 tsp. salt
  • 1/4 tsp. baking soda
  • A pinch of Kosher salt

Begin by preheating the oven to 375 degrees. Soak the dates in hot water for about 5 minutes or until they have softened. Then add the dates, nut butter, and vanilla to a food processer and blend until smooth. Once blended add the date paste to the mixing bowl. Add in chocolate, almond flour, salt, baking powder, and mix until cookie dough consistency.

Now, begin forming the dough balls together and place on the cookie sheet. Place them in the oven for about 10 minutes, take them out to press down and sprinkle with salt. Place them back in the oven for about 2-5 more minutes or until they have browned.

Once they have cooled for a few minutes, its time to enjoy!
