30 Minute Pork Loin Ramen

A great, warm and cozy soup, especially for these winter months!

What you need:

  • 1 Tbsp. minced ginger
  • 4 cloves minced garlic
  • 4 cups chicken broth
  • 4 cups miso broth
  • 2 cups water
  • 1 Tbsp. rice vinegar
  • 2 Tbsp. soy sauce
  • 1 tsp. sesame seed oil
  • 1 lemon juiced
  • 1/2 head red cabbage
  • 5 ramen noodle blocks
  • 1 pork loin

For the topping:

  • 4 soft-boiled eggs
  • 1/2 cup shelled edamame
  • 1/4 cup sliced green onion
  • 1/2 cup kimchi
  • drizzle of sriracha

First step is to cook the pork loin, we chose to roast it in the oven at 400 degrees. Simply preheat the oven to 400, place your pork loin in a roasting pan, drizzle with olive oil and lemon juice, and evenly season with garlic salt and pepper. Place the loin in the oven for 32-30 minutes and measure with a meat thermometer to know when it is fully cooked. (145 degrees is what we aim for!) Once the meat is fully cooked and has rested, thinly slice it to go on top of the ramen.

It’s time to prepare the broth. Heat a large pot on the stove and add minced garlic and ginger until fragrant. Then add in the chicken and miso broth. Once combined, add in water, rice vinegar, soy sauce, sesame seed oil, lemon juice, and cabbage. Bring the broth to a boil and then reduce it to a simmer until serving time.

Now, to soft-boil the eggs, begin by bringing a pot of water to a boil. Once the water is boiling, gently place the eggs into the water and let them boil for 6 minutes. As the eggs are boiling, fill a large bowl with water and ice. When the 6 minutes are up, scoop each egg out of the pot and place it in the ice water. Let them cool in the water until they are ready to be shelled.

Next, boil water for the ramen noodles and cook them for the amount of time the packaging calls for.

Now the exciting part, plating! We recommend individually plating each bowl. Start with noodles, broth, soft-boiled egg, kimchi, pork loin, edamame, green onion, and sriracha.

All that is left to do is dig in and enjoy!
