This is a great jam recipe if you’re short on time!
What you will need:
- 1 cup frozen mixed berries
- 1 Tbsp chia seeds
- 1/2 Tbs of lemon juice
- 1/2 Tbsp honey
Begin by heating the frozen berries in a small pot on the stove on medium-low heat. Stir the berries and mash them down (you can use a fork or potato masher) until they release their juice and break down. You might need to turn the heat down on the stove if you start to notice the berries cooking before they break apart. Once the berries have melted down into a warm sauce, add the chia seeds, lemon juice, and honey. Stir the ingredients until fully mixed and remove off heat. The jam will still feel runny, but the chia seeds will really thicken up when it cools, so don’t worry about cooking it any longer. Pour the jam into a jar and place it in the fridge for 20 -30 minutes to set up (you can use it sooner if you want it warm.
