Fresh Milled Greek Yogurt Coffee Cake

This quick coffee cake is good enough that you should probably double it!

What you will need:

  • 1/4 cup butter (melted)
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup Greek yogurt
  • 1/2 tsp baking soda
  • 1 cup fresh milled flour (soft white wheat berries)
  • 3/4 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1/2 tsp almond extract

For the topping:

  • 1 gala apple (sliced thinly)
  • 1/2 Tbs sugar
  • 1/2 tsp cinnamon

Begin by milling your flour according to the mill’s instructions. We milled 1 cup of berries and had leftover fresh flour.

In a small bowl, mix the Greek yogurt and baking soda together (this will start to activate the baking soda) and set aside. Then mix the melted butter, sugar, and egg together until the mixture is smooth. After that, mix the flour, baking powder, salt, vanilla, almond extract, and yogurt/soda into the bowl of eggs, butter, and sugar. Mix the batter until it is all combined.

Slice the apple into 1/8 – 1/4 inch thick slices. Mix the cinnamon sugar in a bowl and toss the apple in it until each slice is lightly coated.

Now dump all of the batter into a 9×9 glass baking dish and spread the batter so it is an equal thickness across the whole pan. Then lay the apple slices thick side down on the top of the batter. Lay the sliced apples in rows so as much of the top is covered in apples.

Bake the coffee cake at 375 for 25-30 minutes until golden brown on the top and a toothpick comes out clean from poking it.
