A delicious protein-packed turkey roll, perfect for an appetizer or side!
Ingredients you will need:
- 2 carrots grated (about 1/2 cup)
- 2 cups shredded cabbage
- 1 small onion chopped
- 3 cloves garlic, chopped
- 1 lb. ground turkey
- 1 Tbs. olive oil
- 1/2 tsp. garlic salt
- 2 Tbs. soy sauce
- 1/4 tsp. siracha
- 1/2 tsp. sesame seed oil
- 1/2 tsp. rice vinegar
- Salt and pepper to taste
- 1 pack egg roll wrappers
- Olive oil or beef tallow for searing
Begin by chopping your cabbage, onions, and garlic, and shredding the carrots. Slice the cabbage into bite-sized strips, like you would for a slaw. All of the veggies will get cooked down and become smaller in size.
To make the filling, heat a skillet on medium heat. Add olive oil, then garlic and onions. Cook until they are slightly transparent and fragrant. Add in the ground turkey and cook until almost done, then add in the cabbage and carrots. Cook everything until soft and the turkey is fully cooked. Season this mixture with garlic salt, soy sauce, sriracha, sesame seed oil, rice vinegar, and pepper. Mix so the seasoning is even throughout and add any salt or pepper to your liking.
Once the filling has cooled down slightly. Prepare to wrap the lumpias. Lay one egg roll wrapper flat on a cutting board, scoop about 2 Tbs. of the filling into the center of the wrapper and roll like a small burrito. Using some water, get the last edge of the wrapper wet as you roll to seal the lumpia. Additionally, the package of egg roll wrappers should have instructions on how to roll them. Fill and roll each lumpia until you are done with the filling.
To finish cooking, thinly cover the bottom of a skillet with olive oil or beef tallow and heat to medium-high. Once hot, set each lumpia on the hot skillet and cook until golden brown, flip and repeat until all sides are cooked and golden. You can enjoy these on their own or dipped in a sauce like a sweet Thai chili sauce.
This recipe makes 10 lumpias. The total amount can vary depending on how full you stuff each wrapper.
