This is a yummy way to get fresh veggies in a light and refreshing meal.
What you will need:
- 1 pack of rice paper
- 1 14-oz package of extra-firm tofu
- 1/2 cucumber
- 2 carrots
- 1 head of butter lettuce
- 1 bell pepper
- 1/2 bunch of cilantro
- 1 lime
Tofu Marinade:
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar
- 1 Tbsp. of sesame seed oil
- 1 Tbsp. of sriracha
- 1 tsp. of onion power
- 1 clove of minced garlic
Mix all the ingredients for the marinade together and cut the tofu into 1/4 inch strips. Then cover the tofu with the marinade and let it set for about 20-30 minutes.
Cut all the veggies thinly about 1/4 inch thick and 3 inches long (thin long spears.)
After the tofu has marinated, warm a skillet to medium heat and sauté each individual piece of tofu until crisp. You can cook multiple slices at a time just make sure they are not overlapping each other.
Once all the veggies have been thinly sliced and the tofu is crispy, it is time to prepare the rice paper. Use a wide shallow dish with a lip on it and fill the bottom with warm water. Place the rice paper in the water for about 10 seconds, flip and let the other side sit in the water for 10 seconds.
You should only soften one piece of rice paper at a time then fill it and wrap it before softening the next. Once the paper is soaked it will get extremely sticky and rip if it sits too long.
After the paper is softened, begin placing 2-3 slices of each veggie and 1-2 pieces of tofu in the center of the paper and roll like a burrito. Continue prepping a piece of rice paper, filling it and rolling it until all the veggies and tofu are finished.
This should make about 10 rolls, depending on how full you stuff them, so once all the ingredients are used, you are done!!
Peanut Dipping Sauce:
- 1/4 cup of peanut butter
- 2 Tbsp. water
- 1 Tbsp. honey
- 1/2 of a lime (juice)
- 1 tsp. of rice vinegar
- 1 tsp. of soy sauce
- 1/2 sesame seed oil
Dip your rolls in the peanut sauce and enjoy!
